mama's potato and chickpea salad


this potato and chickpea salad or aalo chana chaat is light, super-filling, and easy to prep.

ingredients


1 cup boiled chickpeas
2 medium boiled potatoes, cubes
1 small tomato, chopped
1 small red onion, finely sliced
1/2 cup boondi
1 teaspoon lemon juice
1/2 teaspoon chaat masala
1 1/2 teaspoon green chili and tamarind dip
parsley and coriander leaves, to garnish

directions


In a bowl, mix lemon juice, chaat masala, and green chili and tamarind dip. Add boiled chickpeas, potatoes, tomato, red onion, and boondi. Toss well to coat all the ingredients evenly.

Garnish with green chili and tamarind dip, chopped parsley, and coriander leaves. Serve cool.
