these spicy scrambled eggs or anda bhurji is a protein-rich meal; the added turmeric, ginger, and onions boosts immunity and aids digestion.

3-5 eggs
3 medium red onions, julienne
1 green anaheim chili, seeded & chopped
2 1/2 inch ginger, julienne
3-5 green chilies, chopped
1/2 teaspoon red chili powder
1 teaspoon red chili flakes
1/2 teaspoon garlic powder
1/2 teaspoon turmeric
1/4 teaspoon salt, to taste
1/2 teaspoon cumin powder
1/2 teaspoon coriander powder
1/2 teaspoon ground black pepper
1/4 teaspoon nigella seeds
3 tablespoons ghee
green onion, chopped
parsley, chopped


Heat ghee, on a medium-high flame, in a pan. Add onions, anaheim chili, ginger, and green chilies. Saute until onions are translucent.

Add red chili powder, red chili flakes, garlic powder, turmeric, salt, cumin powder, coriander powder, ground black pepper, and nigella seeds. Crack eggs on top of it and stir lightly on a low-medium flame. Scramble, stirring continuously, for 5-7 minutes or until the eggs are fluffy and fully cooked.

Garnish with green onions and parsley.
