ingredients

for batter
2 1/2 cups gram flour
4-5 medium onions - sliced
1 tablespoon red chili flakes
1 1/2 teaspoon salt, to taste
1 tablespoon coriander powder
1/2 teaspoon roasted coriander seeds - crushed
3 anaheim green/red chilies - chopped
1/2 teaspoon baking powder
1 teaspoon cumin powder
1/2 teaspoon turmeric
1/2 teaspoon garlic powder
1/2 teaspoon nigella seeds
1/4 cup water, as needed
for frying
5-7 cups oil

Preheat oil in a deep frying pot over medium flame.

Meanwhile, in a large bowl, mix gram flour with red chili flakes, onion, salt, coriander powder, crushed coriander seeds, chopped anaheim, baking powder, cumin powder, turmeric, garlic powder, and nigella seeds. Add water as needed to make a semi-thick, lump-free batter.

To test the oil temperature, drop a bit of batter, which should rise with bubbles formed around it and float without turning dark brown.

Now, gently drop tablespoon-sized batter, in batches, and fry for 2-3 minutes before turning. Fry and stir until golden brown. Serve hot.
