beef curry


for boiling
1 kg beef - boneless and cubed
3-4 cups water
for curry
2 1/2 cups water
15-20 garlic cloves
3 medium onions - sliced
1 tablespoon green chili - finely chopped
1 tablespoon red chili flakes
1/2 teaspoon paprika
1 teaspoon red chili powder
1 tablespoon salt, to taste
1/2 teaspoon ground black pepper
1 teaspoon turmeric
1-2 tablespoons butter
1 1/2 tablespoons coriander powder
1 tablespoon cumin powder
1/4 teaspoon nigella seeds
3 tablespoons yogurt
1 teaspoon tomato paste
1 teaspoon garam masala powder
for garnishing
green onion - chopped
ginger - julienne

To remove meat impurities, wash beef cubes and boil for 7-10 minutes, in a large pot, over medium-high heat. Strain half the water or simply discard the foam formed with a ladle.

Add 2 to 2 1/2 cups of water in the same pot, garlic cloves, sliced onions, red chili flakes, paprika, red chili powder, salt, ground black pepper, turmeric, coriander powder, cumin powder, and nigella seeds. Simmer over low heat for an hour.

Turn the flame to medium-high heat until the water has evaporated. Add tomato paste and yogurt and stir for 7-10 minutes. Lastly, add butter and sprinkle garam masala powder. Garnish with green onion and ginger and serve hot.
